I don't think that playing fast or being more technically schooled means playing with less emotion. I would suggest listening the Satriani's The Extremist, especially Friends, Cryin' or Summer Song, and also his eponymous album. Vai also, tons of passion and emotion, listen to Hand On Heart from Fire Garden, or anything off of Seventh Song or Ultra Zone. The tone of most of the shred or "fast" guys can't be changed much unfortunately, as many of them play only Ibanez guitars.
These days I listen to everyone from Iron Maiden to Al Di Meola, from the Allman Brothers all the way to Plant/Krauss.
You could try Eric Johnson or Stanley Jordan? Or Jeff Beck and Frank Gambale? Even Steve Morse or Larry Carlton. Lots of tone to choose from there.
For as many moods as I may have, there's a tone to go with it.
